Summer's here! So crank up the grill and cook up a tasty dinner that is also fun for the kids to help put together. This meatball recipe is a great go-to recipe to get you out of the funk of cooking the same ole boring dinners. It's also a great appetizer when you have guests. It's so easy, and so delicious!
What you need:
- 1 lb ground beef
- 1 lb pork sausage
- 2 large eggs
- 1 1/2 cups Italian bread crumbs
- 2 cloves minced garlic
- 1/2 cup finely chopped onions
- Thick cut bacon
- 1 red onion, cut into large chunks
- 1 green bell pepper, seeded and cut into large chunks
- 1 red bell pepper, seeded and cut into large chunks
- 1 1/2 cups BBQ sauce
- Bamboo skewers
What you do:
- Soak the bamboo skewers for 20 minutes in a glass of water to keep them from burning on the grill.
- Place ground beef, pork sausage, eggs, bread crumbs, garlic, and onions into a bowl and thoroughly mix the ingredients together.
- Roll the mixture into approximately 28 golf ball-sized meatballs.
- Cut the bacon in half and wrap each meatball with a half slice of bacon.
- Place meatballs on the skewers, adding bell pepper chunks and red onion chunks to fill them up. (They are now called kabobs!)
- Place kabobs on the top rack of the grill for 20 minutes at 350 degrees.
- Brush BBQ sauce over the entire kabob and cook for another 10 minutes or so, adding more sauce if desired.
- When they're done to your liking, remove from the grill, let cool, and ENJOY!
